Fried Peppers
Small and slim green peppers are best for this recipe, in which they are pan fried whole in olive oil and salt.
Ingredients
4 tablespoons olive oil
12 slim green peppers
Freshly ground sea salt to taste

Serves: 5
Method
Heat the oil in a large frying pan over medium heat and cook the peppers whole, including the stems, for about 15 minutes, turning them from time to time. Do not overcook them they are done when they become a little floppy and brown in places. Sprinkle with plenty of freshly ground sea salt and serve either hot or cold with grilled meat or fish.
