Honey Cake

1 egg
cup sugar
150 g honey
Cinnamon, to taste
Cloves, to taste
teaspoon bicarbonate of soda
2 cups flour, sifted
50 g blanched almonds


Serves: 10


1. Beat egg and sugar together.

2. Add honey, spices and bicarbonate of soda.

3. Gradually fold in flour.

4. Pour into a greased, floured square cake tin.

5. Decorate the top of the cake with almonds and bake in a preheated 180°C (350°F) oven for 15-20 minutes.

6. When cool, the cake may be cut into 2 layers.

7. Fill with jam.
