Strawberry And Mint Champagne
This is a simple concoction that makes a bottle of champagne or sparkling white wine go much further. It tastes very special on a hot summer's evening.
Ingredients
500g/1¼ strawberries
6-8 fresh mint leaves
1 bottle champagne or sparkling white wine
Fresh mint sprigs, to decorate

Serves: 4
Method
1. Purée the strawberries and fresh mint leaves in a food processor.
2. Strain through a fine sieve into a large bowl. Half fill a glass with the mixture and top up with champagne or sparkling wine. Decorate with a sprig of fresh mint.
