Bramble Syllabub
This delicious syllabub can be made using any soft fruit, such as blackcurrants, blackberries or raspberries.
Ingredients
500 g (1 lb) brambles
125 g (4 oz) sugar
2 tablespoons Crème de Cassis liqueur
284 ml (10 fl oz) carton double cream, whipped
1 egg white

Serves: 6
Method
Place the brambles and sugar in a bowl, cover and cook on HIGH for 5 minutes.
Press the fruit through a sieve, discarding the seeds. Stir in the liqueur and leave to cool.
Fold in the cream.
Whisk the egg white until stiff, then fold into the syllabub. Pour into 6 glasses and chill until required.
Serve with dessert biscuits or sponge fingers.
