Maharajah Sheek Kebab

600 g/1 Ib lean beef, lamb, pork or venison, or skinless chicken, turkey or duck breast
4-6 garlic cloves, chopped
2 tablespoons dried onion flakes
1 tablespoon garam masala
1 teaspoon salt
1 tablespoon chopped fresh mint leaves
2 teaspoons bottled mild curry paste
1-3 fresh green chillies, seeded and chopped (optional)
2 tablespoons chopped fresh coriander leaves


Serves: 4


1.Preheat the oven to 190C/375F/Gas Mark 5.

2.Chop the meat into cubes, removing all fat and gristle. Place the meat and all the other ingredients in a food processor and pulse-grind until the mixture becomes relatively smooth.

3.Divide the mixture into four large or eight small pieces, then shape each piece into a sausage. If you wish, form the sausage shapes on skewers.

4.Place on a baking sheet and bake for 10-12 minutes.

Serve hot or cold.
