Quick Curried Nuts

These deliciously spicy nuts are wonderful served almost straight from the oven, whilst still warm.

Ingredients

Makes: 500 g/1 lb

40 g/1 oz butter or sunflower oil
1 tablespoon curry powder with whole spices
500 g/1 lb mixed skinned nuts, such as almonds, brazils, walnuts, pecans and hazelnuts
1 teaspoon salt


Method

1 Melt the butter in a roasting tin and stir in the curry powder. Cook, stirring, for 30 seconds. Add the nuts and stir until well coated.


2 Roast in the oven at 150°C (300°F), Gas Mark 2 for 30 minutes, stirring from time to time.


3 Remove from the oven and toss the nuts with the salt. Allow to cool completely and store in an airtight container for up to 2 weeks.

Preparation time: 2 minutes, plus cooling
Cooking time: 32 minutes
Oven temperature: 150C (300F), Gas Mark 2
