Chicken Vol-au-vents
Ingredients
1 onion, finely chopped
60 g/2 oz butter
2 cooked chicken breasts, chopped
100 ml/3˝ fl oz white wine
75 g/2˝ oz flour
100 ml/3˝ fl oz milk
100 ml/3˝ fl oz stock
1 hard-boiled egg, shelled and finely chapped
Salt
Freshly ground black pepper
˝ teaspoon grated nutmeg
8 vol-au-rent cases

Method
Sauté the onion in the butter, until lightly coloured. Add the chicken, then stir in the wine and simmer until reduced. Stir in the flour, cook for a few minutes, then add the milk and stock. Cook until reduced to a thick sauce. Remove from the heat, add the chopped egg and season with salt, pepper and nutmeg. Meanwhile, preheat the oven to 180°C/350°F, gas mark 4. Fill the vol-au-vents with the mixture and warm through in the oven.
