Briam With Potatoes And Courgettes

1 kilo potatoes
1 kilo medium courgettes
kilo fresh tomatoes
6 cloves garlic
1 bunch parsley, finely chopped
1 cups olive oil
Salt and pepper


Clean, peel and slice the potatoes. Clean the courgettes and chop into thick, long and narrow slices. In a medium-sized baking tray arrange a layer of courgettes. Sprinkle with salt and pepper
and half the parsley. Finely chop three cloves of garlic, peel and finely chop the tomatoes and pour half over the courgettes. Continue with a layer of potatoes, then another of courgettes and top off with the remaining potatoes, garlic, parsley and tomatoes and salt and pepper. Drizzle the food with olive oil. Add two to three cups of water and cook in the oven for around an hour. You can also substitute half the courgettes with aubergines.
