Black Walnut Layer Cake

2 cups cake flour
1 tablespoon baking powder
teaspoon salt
cup (1 stick) butter or margarine, at room temperature
1 cup granulated sugar
2 eggs
1 teaspoon grated orange rind
1 teaspoon vanilla extract
1 cup minced black walnut pieces
cup milk
Black walnut halves, for decoration

cup Light-brown sugar, firmly packed
3 tablespoons maple syrup
cup milk
1 - 2 cups confectioner's sugar, sifted


Serves: 8


1. Grease 2 - 8 x 2 inch cake pans and line the bottoms of each with a disk of greased wax paper. Preheat the oven to 375°F.

2. Sift together the flour, baking powder and salt.

3. Beat the butter or margarine to soften, then gradually beat in the granulated sugar until light and fluffy Beat in the eggs, one at a time. Add the orange rind and vanilla and beat to mix well.

4. Stir in the minced walnuts. Add the flour alternately with the milk, stirring only enough to blend after each addition.

5. Divide the batter between the prepared cake pans. Bake until a cake tester inserted in the centre comes out clean, about 25 minutes. Cool in the cake pans for 5 minutes before unmolding onto a wire rack.

6. For the frosting, melt the butter in a medium-size saucepan. Add the brown sugar and maple syrup and boil 2 minutes stirring constantly.

7. Add the milk. Bring back to a boil and stir in ¼ cup of the confectioners' sugar. Remove from the heat and let cool to lukewarm. Gradually beat in the remaining confectioner's sugar. Set the pan in a bowl of ice water and stir until the frosting is thick enough to spread.

8. Spread some of the frosting on one of the cake layers. Set the other layer on top. Spread the remaining frosting over the top and sides of the cake. Decorate with walnut halves.
